Ethiopian Udon Noodle Stew
A hearty, comforting stew made with homemade udon noodles and Ethiopian spices.
Ingredients
- β8 oz Homemade Udon NoodlesCut into 1-inch pieces
- β1 large Red OnionChopped
- β1 large Red Bell PepperChopped
- β2 medium CarrotsPeeled and chopped
- β2-inch piece GingerGrated
- β2 tsp Ethiopian Berbere SpiceStore-bought or homemade
- β4 cups Vegetable BrothHomemade or store-bought
- β2 cups Water
- β1 tsp Salt

In a large pot, heat 2 tbsp of oil over medium heat.

Add the chopped onion, bell pepper, and carrots. Cook until the vegetables are tender, about 10 minutes.

Add the grated ginger and cook for 1 minute.

Add the berbere spice and cook for 1 minute, stirring constantly.

Add the vegetable broth and water. Bring to a boil, then reduce the heat to low and simmer for 10 minutes.

Add the homemade udon noodles to the pot. Cook for an additional 5-7 minutes, or until the noodles are tender.

Season with salt to taste.
