Baked Cheese Blintzes
A hearty and indulgent Ukrainian dish featuring cheese-filled blintzes baked to perfection.
Ingredients
- β1 cup cottage cheesedrained and crumbled
- β1/2 cup ricotta cheesemixed with cottage cheese
- β2 eggsbeaten
- β1/2 cup cheddar cheeseshredded
- β2 cups all-purpose flourfor blintz dough
- β1 cup milkfor blintz dough
- β2 tablespoons buttermelted
- β1/4 cup sugaroptional

In a large mixing bowl, combine cottage cheese, ricotta cheese, and eggs. Mix well.

In a separate bowl, mix flour and milk to make blintz dough.

Heat a non-stick pan over medium heat. Add a small amount of melted butter.

Pour a small amount of blintz dough into the pan and tilt to coat evenly.

Add a spoonful of the cheese mixture onto the center of the dough.

Fold the dough over the cheese mixture and cook for 2-3 minutes or until golden brown.

Transfer the blintzes to a baking dish and top with shredded cheddar cheese and a sprinkle of sugar (if using).

Bake at 375Β°F (190Β°C) for 15-20 minutes or until the cheese is melted and the blintzes are golden brown.
