Pan-Seared Irish Cod with Lemon and Herbs
A flavorful and moist Irish cod dish, pan-seared to perfection and served with a hint of citrus and herbs.
Ingredients
- β4 fillets Irish cod fillets (2 x 6 oz)Fresh or frozen cod fillets with skin removed
- β2 tbsp Unsalted butterSoftened to room temperature
- β2 tbsp Fresh lemon juiceFreshly squeezed
- β2 tbsp Fresh chopped parsleyFreshly chopped
- β1 tsp Garlic powderOptional, for added flavor
- βto taste Salt and pepperFreshly ground black pepper

Preheat the oven to 400Β°F (200Β°C).

Rinse the cod fillets under cold water and pat them dry with a paper towel.

Season the cod fillets with garlic powder, salt, and pepper.

Heat a large skillet over medium heat. Add the butter and let it melt.

Add the cod fillets, skin side up (if they have skin).

Cook for 3-4 minutes or until the skin is golden brown.

Flip the cod fillets over and cook for an additional 3-4 minutes or until they are cooked through.

Transfer the skillet to the preheated oven and bake for 8-10 minutes or until the cod is cooked through.

Remove the skillet from the oven and sprinkle the chopped parsley over the top of the cod.

Squeeze the fresh lemon juice over the cod and serve immediately.
