Irish Lamb Stew
A hearty and comforting Irish lamb stew made with tender lamb, potatoes, carrots, and Guinness stout.
Ingredients
- β1 1/2 pounds Lamb shoulder, cut into 2-inch cubesLook for lamb with a good layer of fat
- β1 large Onion, chopped
- β2 large Carrots, peeled and chopped
- β2 large Potatoes, peeled and cubed
- β1 cup Guinness stout
- β2 tablespoons All-purpose flour
- β6 slices Bacon, diced
- β2 sprigs Fresh thyme
- β Salt and pepper
- β2 cups Water

Heat oil in a large Dutch oven over medium-high. Add the lamb and cook until browned on all sides, about 5 minutes. Remove from pot and set aside.

Add the bacon to the pot and cook until crispy. Remove from pot and set aside with the lamb.

Add the onion to the pot and cook until softened, about 5 minutes.

Add the carrots and potatoes to the pot. Cook for 5 minutes.

Add the flour to the pot and cook for 1 minute.

Add the Guinness stout, thyme, salt, and pepper to the pot. Stir to combine.

Return the lamb and bacon to the pot. Bring to a boil, then cover and transfer to the oven.

Bake at 300Β°F for 1 1/2 hours, or until the lamb is tender.

Remove from oven and let rest for 10 minutes before serving.
