Creamy Italian Risotto
A classic Italian dish made with Arborio rice, Parmesan cheese, and a touch of cream. Perfect for a cozy dinner.
Ingredients
- β1 cup Arborio rice
- β1/2 cup Parmesan cheeseshaved
- β1/4 cup White wine
- β2 tablespoons Butter
- β1 medium Onionchopped
- β2 cloves Garlicminced
- β1 cup Mushroomssliced
- β1/2 cup Heavy cream
- β1/4 cup Fresh parsleychopped

Heat the chicken broth in a separate pot and keep warm.

In a large skillet, melt 1 tablespoon of butter over medium heat.

Add the chopped onion and cook until translucent, about 3-4 minutes.

Add the minced garlic and cook for an additional minute.

Add the Arborio rice and cook for 1-2 minutes, until lightly toasted.

Add the white wine and cook until the liquid is almost completely absorbed, stirring constantly.

Add 1/2 cup of the warm chicken broth to the rice and stir until absorbed. Repeat this process until all the broth is used.

After 20-25 minutes of cooking, add the sliced mushrooms and cook until they release their liquid and start to brown.

Stir in the remaining 1 tablespoon of butter, the Parmesan cheese, and the heavy cream.
