Black Bean Stew
A hearty portuguese stew made with black beans and a blend of spices. Serve with a side of crusty bread for a comforting meal.
Ingredients
- β1 can Cannellini beansdrained and rinsed
- β1 cup Black beanscooked according to package instructions
- β1 medium Onionchopped
- β3 cloves Garlicminced
- β1 medium Red bell pepperchopped
- β2 tablespoons Tomato pasteoptional
- β1 teaspoon Dried thymedried
- βto taste Salt
- βto taste Black pepper
Instructions

Heat 2 tablespoons of olive oil in a large Dutch oven over medium heat.

Add the chopped onion and cook until softened, about 5 minutes.

Add the minced garlic and cook for an additional 1 minute.

Add the chopped red bell pepper and cook for 2-3 minutes.

Add the cooked black beans, cannellini beans, tomato paste, and dried thyme.

Stir to combine and bring to a simmer.

Reduce heat to low and let cook for 20-25 minutes, stirring occasionally.
