Portuguese Stew with Tofu
A hearty and comforting stew inspired by Portuguese cuisine, featuring tender tofu and a rich vegetable broth.
Ingredients
- β1 block (14 oz) Extra-firm Tofu
- β2 large Potatoes
- β2 medium Carrots
- β1 large Onion
- β3 cloves Garlic
- β1 can (14.5 oz) Tomatoes
- β4 cups Vegetable Broth
- β1 cup Red Wine
- β1 tsp Salt
- β1 tsp Black Pepper

Heat the olive oil in a large Dutch oven over medium-high heat.

Add the onion and garlic and cook until the onion is translucent, about 5 minutes.

Add the potatoes, carrots, and tofu. Cook for 5 minutes, stirring occasionally.

Add the tomatoes, vegetable broth, red wine, salt, and pepper. Stir to combine.

Bring the stew to a boil, then reduce the heat to medium-low and simmer, covered, for 20 minutes.

Remove the lid and continue to simmer for another 10 minutes, or until the vegetables are tender.
