Chicken Quesadilla
A classic mexican dish filled with shredded chicken and melted cheese, served with a side of salsa.
Ingredients
- β1 pound boneless chicken breastcooked and shredded
- β4-6 tortillaslarge flour tortillas
- β1 cup shredded cheesecheddar or Monterey Jack
- β1 cup salsahomemade or store-bought
- β1/2 cup chopped onionoptional
- β1/2 cup chopped bell pepperoptional
- β1 teaspoon cumindried
- β1/2 teaspoon paprikadried
- βto taste saltoptional
- βto taste pepperoptional
Instructions

Heat a large skillet over medium-high heat.

Add the cumin and paprika to the skillet and cook for 1 minute.

Add the chopped onion and bell pepper to the skillet and cook until softened.

Add the shredded chicken to the skillet and stir to combine.

Season with salt and pepper to taste.

In a large bowl, combine the tortillas and shredded cheese.

Place a large skillet over medium heat.

Place a tortilla in the skillet and sprinkle with shredded cheese and chicken mixture.

Fold the tortilla in half and cook for 2-3 minutes, until the cheese is melted and the tortilla is crispy.

Flip the quesadilla and cook for an additional 2-3 minutes, until the other side is crispy and the cheese is melted.

Repeat with the remaining tortillas and filling.

Serve the quesadillas hot with a side of salsa.
