Chicken Tagine Tacos
A fusion twist on traditional Mexican street food, combining the flavors of Moroccan chicken tagine with crispy tacos.
Ingredients
- β1 1/2 pounds Chicken breastsboneless, skinless
- β2 tablespoons Moroccan spice blendcontaining cumin, coriander, cinnamon, ginger
- β2 tablespoons Olive oilfor cooking
- β1 large Onionschopped
- β3 cloves Garlicminced
- β1 can (14.5 oz) Canned diced tomatoesdrained
- β1 cup Red wineoptional
- β8-10 Tortillas (corn or flour)for tacos
- β2 Avocadochopped, for serving
- β2 Lime wedgesfor serving

Heat 1 tablespoon olive oil in a large Dutch oven over medium-high heat.

Add the chicken and cook until browned, about 5 minutes. Remove from heat and set aside.

Add the remaining 1 tablespoon olive oil, then sautΓ© the onions and garlic until softened, about 5 minutes.

Add the Moroccan spice blend and cook, stirring constantly, for 1 minute.

Add the diced tomatoes, red wine (if using), and browned chicken. Stir to combine.

Bring the mixture to a simmer, then reduce heat to low and cook, covered, for 20-25 minutes or until the chicken is cooked through.

Warm the tortillas by wrapping them in a damp paper towel and microwaving for 20-30 seconds.

Assemble the tacos by slicing the chicken and serving it in the warmed tortillas, topped with avocado and a squeeze of lime juice.
