Pork Korean BBQ Stew
A hearty, mustardy Korean-inspired stew made with tender pork and a variety of spices.
Ingredients
- β1 1/2 pounds Pork shoulder, cut into 1-inch pieces
- β2 tablespoons Gochujang (Korean chili paste)
- β2 tablespoons Soy sauce
- β2 tablespoons Brown sugar
- β2 cloves Garlic, minced
- β1 tablespoon Ginger, grated
- β1 tablespoon Doenjang (Korean fermented soybean paste)
- β1/4 cup Green onions, chopped
- β2 tablespoons Toasted sesame oil
- βto taste Salt and black pepper

Heat 2 tablespoons of sesame oil in a large Dutch oven over medium-high heat.

Add the pork and cook until browned, about 5 minutes. Remove the pork from the pot and set aside.

Add the remaining 2 tablespoons of sesame oil to the pot, then add the garlic and ginger. Cook for 1 minute.

Add the gochujang, soy sauce, brown sugar, and doenjang to the pot. Whisk until smooth.

Return the pork to the pot and stir to coat with the sauce.

Add 2 cups of water to the pot and bring to a boil.

Reduce the heat to low and simmer, covered, for 2 hours, or until the pork is tender.

Stir in the chopped green onions and season with salt and black pepper to taste.

Serve the stew hot, garnished with additional green onions if desired.
