Moroccan Cauliflower Couscous
A flavorful and nutritious vegetarian dish that combines the bold spices of morocco with the comfort of couscous and roasted cauliflower.
Ingredients
- β1 head cauliflowerbroken into florets
- β1 cup couscouspreferably whole wheat
- β2 tablespoons olive oil
- β2 tablespoons royalmoroccan spice blend
- β1 teaspoon pepperyoptional
- βto taste salt
- β2 cups water
- β2 tablespoons lemon juice

Preheat oven to 400Β°F (200Β°C).

Toss cauliflower florets with 1 tablespoon olive oil, royal, and peppery (if using). Spread on a baking sheet and roast for 20-25 minutes, or until tender and lightly browned.

In a medium saucepan, bring 2 cups water to a boil. Reduce heat to low and stir in couscous. Cover and cook for 5-7 minutes, or until couscous is tender and fluffy.

Fluff couscous with a fork and stir in lemon juice and salt to taste.

Serve couscous topped with roasted cauliflower.
