Skillet Chicken
A flavorful Portuguese-inspired skillet chicken dish, cooked to perfection in a hearty and savory sauce.
Ingredients
- β4 pounds chicken thighsbone-in, skin-on
- β2 tablespoons olive oil
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 cup chicken broth
- β1 medium red bell pepperchopped
- β2 tablespoons tomato paste
- β1 teaspoon dried oregano
- β1 teaspoon salt
- β1/2 teaspoon black pepper

Heat 1 tablespoon of olive oil in a large cast-iron skillet over medium-high heat.

Season the chicken thighs with salt, black pepper, and dried oregano.

Add the chicken thighs to the skillet and sear for 5-7 minutes on each side, or until browned.

Remove the chicken from the skillet and set aside.

Reduce heat to medium and add the remaining 1 tablespoon of olive oil to the skillet.
