Ukrainian Beef Stew
A hearty and comforting stew that's perfect for a cold winter's night. This Ukrainian-inspired recipe features tender beef and a rich, flavorful broth.
Ingredients
- β1 lb beef stew meat
- β2 cups reduced beef broth
- β1 cup hearty red wine
- β1/2 lb ukrainian sausagesuch as kovbasa
- β1 large onionchopped
- β2 medium carrotspeeled and chopped
- β2 large potatoespeeled and chopped
- β1/4 cup cranberry sauceoptional
- β1 tsp dried thymefresh thyme can be used instead

Heat oil in a large Dutch oven over medium-high heat.

Add the beef and cook until browned, about 5 minutes.

Add the onion and cook until softened, about 3 minutes.

Add the Ukrainian sausage and cook until browned, about 2 minutes.

Add the beef broth, red wine, thyme, and browned beef mixture to the pot.

Bring to a boil, then cover and transfer to the oven.

Bake at 300Β°F (150Β°C) for 2 1/2 hours, or until the beef is tender.

Add the carrots and potatoes to the pot and continue to cook for an additional 30 minutes.
