Jamaican Roasted Chicken
A hearty, flavorful dish that combines the spices of Jamaica with the tenderness of roasted chicken.
Ingredients
- ●1 whole chicken, 3-4 lbs chicken
- ●2 tbsp olive oil
- ●1 tsp allspiceground
- ●1 tsp thymedried
- ●1 tsp cuminground
- ●2-3, seeded and chopped scotch bonnet peppers
- ●2 tbsp brown sugar
- ●2 tbsp soy sauce
- ●2-3 cups roast vegetables (such as carrots, potatoes, and sweet potatoes)

Preheat oven to 425°F (220°C).

Rinse the chicken and pat it dry with paper towels.

In a small bowl, mix together the olive oil, allspice, thyme, cumin, and scotch bonnet peppers.

Rub the spice mixture all over the chicken, making sure to get some under the skin as well.

Season the chicken with salt and pepper to taste.

Place the chicken in a roasting pan and put it in the oven.

Roast the chicken for 45-50 minutes, or until it reaches an internal temperature of 165°F (74°C).

While the chicken is cooking, toss the roast vegetables with a little bit of oil, salt, and pepper.

After the chicken has been cooking for 30 minutes, add the vegetables to the roasting pan and continue to cook for another 20-25 minutes, or until the vegetables are tender.

Remove the chicken and vegetables from the oven and let them rest for 10-15 minutes before serving.
