Vegetable Satay Tacos
A fusion of mexican and malaysian flavors, this dish combines the sweetness of roasted vegetables with the spice of satay sauce, all wrapped up in a crispy taco shell.
Ingredients
- β4 portobello mushroomsstemmed and sliced
- β2 red bell pepperseeded and sliced
- β1 red onionthinly sliced
- β1 cucumbersliced
- β2 tablespoons vegetable oilfor brushing
- β1/2 cup satay saucestore-bought or homemade
- β8-10 taco shellscorn or flour
- β1 cup shredded cheeseoptional

Brush the mushrooms, bell pepper, and onion with vegetable oil and season with salt and pepper.
