Mexican Sausage Skewers
A twist on traditional Mexican street food, these sausage skewers are perfect for a quick and easy dinner. Simply marinate the sausage in a blend of spices and grill to perfection.
Ingredients
- β1 pound Sausage (Mexican Chorizo)you can substitute with polish sausage if chorizo is not available
- β4-6 Skewers (wooden or metal)
- β1 large Onioncut into 1-inch pieces
- β1 large Bell Peppercut into 1-inch pieces
- β1 large Zucchinicut into 1-inch slices
- β1 large Tomatocut into 1-inch pieces
- β1/4 cup Cilantrochopped
- β2 tablespoons Lime Juice
- β2 cloves Garlicminced
- β1 tablespoon Mexican Seasoning

Preheat grill to medium-high heat.

In a large bowl, whisk together lime juice, garlic, and mexican seasoning.

Add the sausage to the marinade and refrigerate for at least 30 minutes.

Thread the sausage, onion, bell pepper, zucchini, and tomato onto the skewers.
