Russian Barley Pilaf
A hearty, comforting dish inspired by traditional Russian cuisine, made with barley, vegetables, and spices.
Ingredients

- β2 tablespoons Olive oil
- β1 medium Onionchopped
- β1 medium Carrotchopped
- β8 ounces Mushroomsliced
- β1 teaspoon Dried thyme
- βto taste Salt
- βto taste Black pepper

Heat the oil in a large saucepan over medium heat.

Add the onion and cook, stirring occasionally, until softened, about 5 minutes.

Add the carrot and cook, stirring occasionally, until tender, about 5 minutes.

Add the mushroom and cook, stirring occasionally, until browned and tender, about 5 minutes.

Add the barley, thyme, salt, and pepper. Stir to combine.

Add 2 cups of water to the saucepan and bring to a boil.

Reduce the heat to low, cover, and simmer, stirring occasionally, until the barley is tender and the liquid has been absorbed, about 25-30 minutes.
