Beef Pilaf
A hearty beef pilaf, inspired by traditional Russian cuisine. Perfect for a cold winter's night.
Ingredients
- β500g Ground Beef85% lean
- β250g Long-grain Ricepreferably uncooked
- β1 large Diced Onionabout 2 cups
- β3 cloves Minced Garlicabout 2 tablespoons
- β1 liter Beef Brothhomemade or store-bought
- β2 tablespoons Tomato Pasteoptional
- βto taste Saltpreferably kosher
- βto taste Pepperpreferably fresh

Heat a large skillet over medium-high heat.

Add the diced onion and cook until translucent, about 5 minutes.

Add the minced garlic and cook for another minute.

Add the ground beef and cook, breaking it up with a spoon, until browned, about 5-7 minutes.

Add the beef broth, tomato paste (if using), salt, and pepper.

Bring the mixture to a boil, then reduce heat to low and simmer for 10 minutes.

Add the uncooked rice and stir to combine.

Return the skillet to medium heat and cook, stirring frequently, until the rice is lightly toasted, about 5 minutes.

Transfer the skillet to the oven and bake at 375Β°F (190Β°C) for 25 minutes.

Remove the skillet from the oven and let it rest, covered, for 5 minutes.

Fluff the pilaf with a fork and serve hot.
