Hearty Scottish Lentil Pie
A traditional Scottish-inspired pie made with lentils and topped with a crumbly cottage cheese crust.
Ingredients
- ●1 cup Puy lentilsRinsed and drained
- ●2 medium CarrotsDiced
- ●1 medium OnionsChopped
- ●1 cup Cottage cheeseCrumbly
- ●1/2 cup All-purpose flourGluten-free

- ●1/2 tsp Black pepper
- ●2 tbsp Butter

Preheat the oven to 375°F (190°C).

In a large saucepan, sauté the onions and carrots in butter until tender.

Add the lentils, salt, and black pepper. Cook for 5 minutes.

Add 2 cups of water to the saucepan and bring to a boil.

Reduce the heat to low and simmer for 20-25 minutes or until the lentils are tender.

While the lentils are cooking, prepare the crust by mixing the cottage cheese and flour in a bowl.

Transfer the lentil mixture to a 9-inch pie dish and top with the cottage cheese crust.

Bake the pie in the preheated oven for 25-30 minutes or until the crust is golden brown.
