Ukrainian Duck and Pilaf
A hearty Ukrainian dish made with tender duck and flavorful pilaf.
Ingredients
- β2 duck breast
- β1 cup pilaf ricepreferably ukrainian pilaf rice
- β2 medium carrotspeeled and chopped
- β1 medium onionschopped
- β2 tablespoons vegetable oil
- βto taste salt
- βto taste pepper
- βchopped fresh parsleyoptional

1. Preheat oven to 375Β°F (190Β°C).

2. Season the duck breast with salt and pepper.

3. Heat 1 tablespoon of vegetable oil in an oven-safe pan over medium-high heat.

4. Sear the duck breast for 2 minutes on each side, then transfer to the oven and cook for 20-25 minutes, or until cooked through.

5. Meanwhile, heat the remaining 1 tablespoon of vegetable oil in a large saucepan over medium heat.

6. Add the chopped onions and cook until softened, about 5 minutes.

7. Add the peeled and chopped carrots and cook for an additional 5 minutes.

8. Stir in the pilaf rice and cook for 1-2 minutes, until lightly toasted.

9. Add 2 cups of water to the saucepan and bring to a boil.

10. Reduce the heat to low, cover, and simmer for 18-20 minutes, or until the liquid has been absorbed and the rice is tender.

11. To serve, slice the cooked duck breast and serve alongside the pilaf and steamed vegetables, garnished with chopped fresh parsley if desired.
