Spicy Sichuan Tofu Stew
A hearty and flavorful stew that combines the bold flavors of Sichuan cuisine with the simplicity of tofu.

- β2 tablespoons Vegetable oil
- β3 cloves GarlicMinced
- β2 inches GingerSliced
- β1 tablespoon Sichuan peppercornsWhole

- β1 cup Bamboo shootsCanned or fresh
- β1 cup Snow peasFresh
- β2 tablespoons Soy sauce
- β1 tablespoon Rice vinegar
- β1 tablespoon Sugar

Heat the oil in a large pot over medium-high heat.

Add the garlic, ginger, and Sichuan peppercorns. Cook, stirring constantly, for 1-2 minutes.

Add the red pepper flakes and cook for 1 minute.

Add the bamboo shoots, snow peas, and tofu. Cook, stirring occasionally, for 5 minutes.

Stir in the soy sauce, rice vinegar, and sugar. Bring the mixture to a simmer.

Reduce the heat to medium-low and cook, covered, for 10-15 minutes or until the flavors have melded together.

Season the stew with salt and pepper to taste.
