Caracas-Style Beef Stew
A hearty, comforting beef stew inspired by the flavors of Caracas, Venezuela. Perfect for a cold winter's night.
Ingredients
- β1 pound beef stew meatcut into 1-inch cubes
- β1 large onionchopped
- β3 cloves garlicminced
- β2 medium potatoescut into 1-inch cubes
- β2 medium carrotspeeled and chopped
- β2 tablespoons tomato pastedried
- β2 cups beef brothhomemade or store-bought
- β1 teaspoon ground cuminground
- β1 teaspoon ground oreganoground

Heat oil in a large Dutch oven over medium-high heat.

Brown the beef cubes on all sides, about 5 minutes.

Remove the browned beef from the pot and set aside.

Reduce heat to medium and cook the chopped onion until softened, about 5 minutes.

Add the minced garlic and cook for 1 minute.

Add the chopped carrots and cook for 5 minutes, or until they begin to soften.

Add the cubed potatoes, beef broth, tomato paste, cumin, and oregano.
