Smoky Moroccan Lentil Stew

Ingredients
- β1 cup Red Lentils
- β1 medium Onion
- β2 medium Carrots
- β1 cup Canned Diced Tomatoes
- β2 tsp Smoked Paprika
- β1 tsp Harissa
- β1 tsp Cumin
- βto taste Salt
- βchopped (optional) Fresh Parsley
- β2 tbsp Olive Oil

Instructions

Heat oil in a large pot over medium heat.

Add onion and cook until softened, about 5 minutes.

Add carrots and cook for another 5 minutes.

Add smoked paprika, harissa, and cumin. Cook for 1 minute.

Add lentils, diced tomatoes, and 4 cups of water. Bring to a boil.

Reduce heat to low and simmer, covered, until lentils are tender, about 30 minutes.
