Jamaican Fried Chicken and Rice
A flavorful and spicy twist on a classic comfort food dish, featuring crispy fried chicken and savory rice.
Ingredients

- β1 cup all-purpose flourfor breading
- β2 tablespoons spicy seasoning blendstore-bought or homemade
- β1/2 cup vegetable oilfor frying
- β1 medium onionchopped
- β1 scotch bonnet pepperchopped (optional)
- β2 cloves garlicminced
- β2 tablespoons soy saucefor marinating
- β1 tablespoon jerk seasoningstore-bought or homemade

1. In a large bowl, whisk together soy sauce, jerk seasoning, and 1 tablespoon of water. Add the chicken pieces and marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

2. Preheat the oil in a large skillet over medium-high heat.

3. Remove the chicken from the marinade, letting any excess liquid drip off.

4. Dredge the chicken pieces in the flour, shaking off excess.

5. Fry the chicken pieces in batches until golden brown and cooked through, about 5-7 minutes per batch.

6. Transfer the fried chicken to a paper towel-lined plate to drain excess oil.

7. In the same skillet, add the chopped onion, scotch bonnet pepper (if using), and garlic. Cook until the onion is translucent, about 3-4 minutes.

8. Add the cooked rice to the skillet, breaking up any clumps with a spatula. Stir to combine with the onion mixture.

9. Cook the rice mixture for 2-3 minutes, stirring frequently, until heated through.
