Spicy Kielbasa Tagine
A hearty and aromatic Moroccan-inspired stew featuring spicy kielbasa and a blend of warming spices.
Ingredients
- β1 pound Kielbasa
- β2 tablespoons Olive oil
- β1 medium Onion
- β3 cloves Garlic
- β1 medium Red bell pepper
- β2 teaspoons Cumin
- β1 teaspoon Coriander
- β1 teaspoon Cayenne pepper
- β1 can (14.5 oz) Tomatoes
- β2 cups Chicken broth
- βto taste Salt and pepper
- βchopped (optional) Fresh parsley

Heat the oil in the bottom of a large Dutch oven over medium-high heat.

Add the onion and cook until browned, about 5 minutes.

Add the garlic and cook for 1 minute.

Add the bell pepper and cook until tender, about 5 minutes.

Add the kielbasa and cook until browned, about 5 minutes.

Add the cumin, coriander, and cayenne pepper. Cook for 1 minute.

Stir in the tomatoes, broth, salt, and pepper.

Bring to a boil, then reduce the heat to low and simmer, covered, for 20 minutes.
