Turkish Menemen Omelette
A hearty, Turkish-inspired omelette made with eggs, onions, tomatoes, and spices.
Ingredients

- ●1 medium Onion
- ●2 medium Tomato
- ●1/4 cup Almond slicesoptional
- ●1 tsp Menemen spice blendor paprika + cumin
- ● Salt
- ● Black pepper

Crack the eggs into a bowl and whisk them together. Add a pinch of salt and pepper to taste.

Heat a non-stick pan over medium heat. Add a tablespoon of oil and sauté the chopped onion until softened.

Add the diced tomatoes to the pan and cook for another 2-3 minutes.

Pour the whisked eggs over the vegetables in the pan. Cook until the eggs start to set.

Add the almond slices on top of the eggs, if using.

Sprinkle the menemen spice blend over the eggs.

Use a spatula to gently fold the omelette in half. Cook for another minute.

Slide the omelette out of the pan onto a plate and serve hot.
