Russian Pilaf with Umami Cheese
A hearty Russian-inspired pilaf dish infused with umami flavors and topped with melted stracciatella cheese.

Heat olive oil in a large skillet over medium heat.

Sauté chopped onion and minced garlic until softened, about 3-4 minutes.

Add sliced mushrooms and cook until they release their moisture and start browning, about 5 minutes.

Add tomato paste and cook for 1-2 minutes, stirring constantly, until fragrant.

Stir in cooked pilaf and cook for about 2-3 minutes, until the pilaf is well coated with the umami sauce.
