Keto Syrian Cabbage Gratin
A rich and satisfying keto dish featuring caramelized cabbage and a creamy, umami-rich gratin.
Ingredients
- β1 medium head, thinly sliced cabbage
- β1 cup, shredded gratin
- β2 tablespoons butter
- β2 cloves, minced garlic
- β1/2 cup chicken broth
- β1/2 cup heavy cream
- β1/2 cup, shredded parmesan cheese
- β2 large, beaten eggs
- β1/4 teaspoon nutmegoptional

Preheat oven to 375Β°F (190Β°C).

In a large skillet, melt butter over medium heat. Add garlic and cook for 1-2 minutes, until fragrant.

Add sliced cabbage to the skillet and cook, stirring occasionally, for 10-12 minutes, until caramelized.

In a separate saucepan, combine chicken broth and heavy cream. Bring to a simmer over medium heat.

Reduce the cream mixture by half, stirring occasionally.

Stir in parmesan cheese until melted and smooth.

In a large baking dish, create a layer of caramelized cabbage.

Pour the cream mixture over the cabbage, followed by a layer of grated gratin.

Repeat the layers two more times, ending with a layer of gratin on top.

In a small bowl, whisk together eggs and nutmeg (if using). Pour the egg mixture over the top of the gratin.
