Tunisian Tagine with Hearty Vegetables
A flavorful and aromatic stew originating from Tunisia, made with hearty vegetables and served over bamboo shoots.
Ingredients
- β1 cup, sliced Bamboo shoots
- β2 medium, peeled and chopped Carrots
- β2 medium, peeled and chopped Potatoes
- β1 medium, chopped Red bell pepper
- β1 medium, chopped Onion
- β3 cloves, minced Garlic
- β2 tablespoons Tomato pasteTunisian tagine is known for its umami flavor, use tomato paste to add depth.
- β2 teaspoons Tunisian spice blendA mix of cumin, coriander, and cinnamon will give your tagine its authentic flavor.
- β2 cups Vegetable broth
- β2 tablespoons Olive oil

Instructions

Heat the olive oil in a large, heavy pot over medium heat.

Add the onion and cook until softened, about 5 minutes.

Add the garlic and cook for another minute, until fragrant.

Add the carrots, potatoes, and red bell pepper. Cook, stirring occasionally, until they begin to soften, about 5 minutes.

Add the tomato paste and cook, stirring constantly, for 1-2 minutes.

Add the vegetable broth, Tunisian spice blend, salt, and black pepper. Stir to combine.

Bring the mixture to a boil, then reduce the heat to low and simmer, covered, for 20-25 minutes, or until the vegetables are tender.
