Uruguayan Stew Recipe
A hearty and flavorful Uruguayan stew recipe made with tender beef and flavorful vegetables.
Ingredients

- β3 cloves GarlicMinced
- β1 medium Red Bell PepperSliced

- β2 tablespoons Tomato PasteOptional
- β2 cups Beef BrothHomemade or store-bought
- β1 cup Red WineOptional

Heat oil in a large Dutch oven over medium-high heat.

Add beef and cook until browned, about 5 minutes.

Add onion, garlic, and red bell pepper. Cook until the vegetables are tender, about 5 minutes.

Add carrots and potatoes. Cook for an additional 5 minutes.

Stir in tomato paste, beef broth, and red wine (if using).

Bring the stew to a boil, then reduce the heat to low and simmer, covered, for 1 1/2 hours, or until the beef is tender.
