Uruguayan Pumpkin Empanadas

- β1 small, peeled and diced pumpkin
- β1/2 cup, chopped onioncaramelized
- β2 cloves, minced garlic
- β1 tsp cumin
- β1 tsp paprika
- β1/2 tsp salt
- β1 package, thawed empanada dough

Preheat oven to 400Β°F (200Β°C).

Caramelize the onion in a pan for 10 minutes.

Add the garlic, cumin, paprika, and salt to the pan and cook for 1 minute.

Add the diced pumpkin to the pan and cook for 5 minutes.

Roll out the empanada dough to a thickness of 1/8 inch.

Place a tablespoon of the pumpkin mixture onto one half of the dough circle.
