Vietnamese Hue-Style Pork Noodle Soup
A hearty and flavorful Vietnamese soup made with braised pork, pork blood cubes, and a variety of spices served over a bed of noodles.

- β2 tablespoons Vegetable oil

- β2 inches GingerSliced
- β2 tablespoons Fish sauce
- β2 tablespoons Soy sauce
- β2 tablespoons Hue-style spice pasteAvailable at Asian markets
- β200g Hue-style noodleAvailable at Asian markets
- βhandful Fresh cilantroChopped

Heat oil in a large pot over medium heat.

Add onion and ginger and sautΓ© until fragrant.

Add pork shoulder and cook until browned on all sides.

Add fish sauce, soy sauce, and spice paste, and stir to combine.

Add pork blood cubes and stir to combine.

Bring to a boil, then reduce heat to low and simmer for 1 hour.
