Vietnamese Pho
A classic Vietnamese noodle soup made with a rich beef broth, tender beef, and fresh herbs.
Ingredients
- β4 cups beef broth
- β2 lbs beef bones
- β1 lb beef slices
- β1 package rice noodles
- β1 medium onion
- β2 inches ginger
- β2 whole star anise
- β1 cinnamon stick
- β2 tbsp fish sauce
- β2 tbsp soy sauce

1. In a large stockpot, combine beef bones and beef broth. Bring to a boil over high heat.

2. Reduce heat to low and simmer for 1 hour.

3. Add onion, ginger, star anise, and cinnamon stick to the pot. Simmer for another 30 minutes.

4. Strain the broth through a fine-mesh sieve into a clean pot. Discard the solids.

5. Cook the rice noodles according to package instructions. Drain and set aside.

6. Slice the beef into thin strips. Add to the pot and cook for 3-5 minutes, or until cooked to desired doneness.

7. Add fish sauce and soy sauce to the pot. Stir to combine.

8. To assemble the pho, place a portion of noodles into a bowl. Add slices of beef and ladle the hot broth over the top.

9. Garnish with fresh herbs, such as basil and mint.
