Coconut Krok Pies
Delicate coconut-filled krok pies that melt in your mouth. Inspired by the sweet treats of Thailand.
Ingredients
- β1 can (14 oz) Coconut Cream
- β2 cups Heavenly Rice Flour
- β1/2 cup Fluffy Sugar
- β1 cup Thai Red Beans
- β1/2 cup Khanom Filling
- β1 package Krok Pastry
- β1/4 cup Coconut Flakes
- β1/4 cup Village Milk
- β1 tsp Vanilla Essence
- β1/4 tsp Salt

Preheat oven to 375Β°F (190Β°C).

In a large mixing bowl, combine coconut cream, heavenly rice flour, fluffy sugar, and Thai red beans.

Add khanom filling and mix until well combined.

Roll out krok pastry to a thickness of about 1/8 inch.

Cut out small squares of pastry and place a spoonful of the coconut mixture in the center of each square.

Fold the pastry over the filling to form a triangle and press the edges together with a fork.

Brush the tops of the pies with a little village milk and sprinkle with coconut flakes.

Place the pies on a baking sheet lined with parchment paper and bake for 20-25 minutes, or until golden brown.

Remove from the oven and let cool for a few minutes before serving.

Drizzle with a little vanilla essence and sprinkle with a pinch of salt.
