Herb Crusted Sea Bass with Indian Curry Sauce

Ingredients

- ●1 cup all-purpose flour
- ●2 tbsp herb mixdried or fresh (thyme, rosemary, parsley)
- ●1 tsp lemon zest
- ●2 tbsp olive oil
- ●1 tbsp infused oilsuch as garlic or herb-infused
- ●1 medium onionchopped
- ●2 tsp curry powder
- ●1 cup curry saucehomemade or store-bought

Preheat oven to 400°F (200°C).

Season the sea bass fillets with salt and pepper.

In a shallow dish, mix together flour, herb mix, and lemon zest.

Dip each sea bass fillet into the flour mixture, coating both sides evenly.

Heat olive oil in a large skillet over medium-high heat. Add infused oil and sauté for 1 minute.

Add the coated sea bass fillets to the skillet and sear for 2-3 minutes on each side.
