Herbal Lamb Tagine
A traditional North African stew made with tender lamb, aromatic herbs, and a blend of spices. This recipe is perfect for a cold winter's night.
Ingredients
- β1 kg lamb shouldercut into 2-inch cubes
- β2 tbsp herbal teabrewed and cooled
- β4 tbsp irish buttermelted
- β1 tsp tagine spice
- βhandful fresh parsley
- β1 onionchopped
- β3 cloves garlicminced
- β2 stalks lemongrasschopped

Heat oil in a large Dutch oven over medium-high heat.

Add lamb and cook until browned on all sides, about 5 minutes.

Add onion and garlic and cook until softened, about 3 minutes.

Add lemongrass, tagine spice, and herbal tea; stir to combine.

Pour in enough water to cover the lamb, then bring to a boil.

Transfer the pot to the oven and cook for 2 1/2 hours, or until the lamb is tender.

Stir in melted butter and chopped parsley.
