Thai Chicken Skewers

Ingredients
- β1 pound, cut into 1-inch pieces chicken breasts
- β2 tablespoons Thai red curry paste
- β1/4 cup coconut milk
- β1 tablespoon fish sauce
- β1 tablespoon sugar
- β2 tablespoons lemon juice
- β1/4 cup chopped fresh cilantro
- β10-12 skewers
- β1/4 cup herbs (such as mint, basil, or lemongrass)
