Herbed Chicken Skewers
A flavorful and colorful Filipino-inspired dish made with marinated chicken breasts, herbs, and vegetables grilled to perfection.
Ingredients
- β1.5 pounds Boneless, skinless chicken breastsCut into 1-inch pieces
- β2 tablespoons Herbed seasoning
- β2 tablespoons Vegetable oil
- β2 tablespoons Lime juice
- β2 cloves GarlicMinced
- β1/2 cup OnionThinly sliced
- β1 cup Bell pepperCut into 1-inch pieces
- β1 cup MushroomsCut into 1-inch pieces
- β10-12 Bamboo skewers

1. In a large bowl, whisk together herbed seasoning, vegetable oil, lime juice, garlic, and onion.

2. Add the chicken to the marinade and toss to coat. Cover and refrigerate for at least 30 minutes or up to 2 hours.

3. Preheat grill to medium-high heat.

4. Thread the marinated chicken onto the bamboo skewers, leaving a small space between each piece.

5. Thread the mushrooms and bell pepper onto the skewers, leaving a small space between each piece.

6. Brush the grill with oil to prevent sticking.

7. Grill the skewers for 8-10 minutes, turning occasionally, or until the chicken is cooked through and the vegetables are tender.
