Spanish Tortilla with Herbed Potatoes
A classic Spanish dish with a twist, adding herbed potatoes to the traditional tortilla espanola. Perfect for breakfast, lunch, or dinner.
Ingredients
- β2 large Potatoesherbed
- β1 medium Onion
- β3 cloves Garlicminced
- β1 Spanish tortillapan
- β1 tbsp Herbschopped (parsley, chives)
- β4 Eggs
- βto taste Salt
Instructions

Peel and dice the potatoes, and boil in salted water until tender.

Chop the onion and mince the garlic.

In a pan, heat some oil over medium heat. Add the onion and garlic and cook until softened.

Add the cooked potatoes to the pan and stir to combine with the onion and garlic.

In a separate bowl, beat the eggs and season with salt.

Add the chopped herbs to the eggs and stir to combine.

Add the egg mixture to the pan with the potatoes and stir gently to combine.

Pour the mixture into the Spanish tortilla pan and cook over low heat until the eggs are set.

Use a spatula to carefully flip the tortilla and cook for an additional 2-3 minutes.
