Malaysian Chicken Skewers with Herby Marinade
Tender and juicy chicken skewers marinated in a herby mixture, perfect for a quick and flavorful dinner. The combination of Malaysian spices and fresh herbs creates a unique and aromatic flavor profile.
Ingredients

- β1/4 cup herby marinade (see below)see marinade ingredients below
- β1 cup grilled pineapplesliced into wedges
- β1/2 cup toasted coconut flakes
- β2 tablespoons Malaysian chili sauce
- β1 tablespoon fish sauce
- β1 tablespoon brown sugar
- β3 cloves garlicminced
- β2 stalks lemongrassminced
- β2 leaves kaffir lime leaveschopped

In a blender or food processor, combine herby marinade ingredients and blend until smooth.

In a large bowl, whisk together marinade, chicken, and a pinch of salt. Let marinate for at least 30 minutes, or up to 2 hours in the refrigerator.

Thread chicken onto skewers, leaving a small space between each piece.
