Herby Labneh Phyllo Pie
A refreshing vegetarian dish from the Middle East, perfect for warm weather. This pie combines the creaminess of labneh cheese with fresh herbs.

- β1 bunch fresh parsley
- β1/4 bunch fresh mint
- β3 cloves garlic
- β1 package herby filo pastry
- β2 tbsp olive oil

Preheat oven to 180Β°C (350Β°F).

Thaw the filo pastry according to the package instructions.

In a bowl, mix together labneh cheese, parsley, mint, garlic, and a pinch of salt.

Brush the bottom of a baking dish with olive oil.

Place a sheet of filo pastry in the baking dish and brush with olive oil.

Repeat the process with the remaining filo pastry, creating a layered pie.

Spoon the labneh mixture into the pie and smooth the top.
