Spicy Korean Collard Noodle Soup
A hearty and flavorful soup that combines the best of Korean and Southern cuisines. Spicy Korean chili flakes, briny noodles, and collard greens come together in a comforting bowl.
Ingredients
- β8 oz Briny Noodles
- β1 bunch Hollow Collard Greens
- β1 tsp Korean Chili Flakes
- β4 pieces Mandu
- β3 cloves Garlic
- β1-inch piece Ginger
- β2 tbsp Soy Sauce
- β1 tsp Sesame Oil
- βto taste Salt
- β4 cups Water
Instructions

Heat sesame oil in a large pot over medium heat.

Add minced garlic and ginger and cook for 1 minute.

Add Korean chili flakes and cook for an additional minute.

Add Briny Noodles and cook for 2-3 minutes, or until they start to soften.

Add Water and bring to a boil.

Reduce heat to low and simmer for 10-15 minutes, or until the noodles are fully cooked.

Add Mandu to the pot and cook for an additional 2-3 minutes.

Add chopped Collard Greens to the pot and cook until wilted.

Season with Soy Sauce and Salt to taste.
