Peruvian Ceviche
A refreshing Peruvian dish made with raw fish marinated in citrus juices, mixed with onions and spices.
Ingredients
- β1 pound Peruvian ceviche fishFresh catch of the day, preferably sea bass or halibut
- β1/2 cup Fermented onionsSliced and marinated in fermented juice
- β2 tablespoons Honeyed lime juiceFresh lime juice mixed with a hint of honey
- β1 cup Fish brothLow-sodium broth for marinating the fish
- β1/4 cup CilantroChopped fresh cilantro for garnish
- β2 Aji amarillo peppersSliced and seeded for added flavor
- βto taste SaltFor seasoning the fish and marinade

1. Slice the fish into thin pieces and place in a shallow dish.

2. In a separate bowl, mix together the fermented onions, honeyed lime juice, fish broth, cilantro, and aji amarillo peppers.

3. Pour the marinade over the fish and refrigerate for at least 30 minutes.

4. Season with salt to taste and adjust the marinade as needed.

5. Serve the ceviche chilled, garnished with additional cilantro if desired.

6. For an added crunch, garnish with toasted corn kernels or crispy plantain chips.
