Smoked Tofu Curry
A flavorful and nutritious vegan curry made with smoked tofu, hot spices, and aromatic Vietnamese flavors. Serve over steamed rice or noodles for a delicious and satisfying meal.
Ingredients
- β1 block (14 oz) Smoked tofu
- β2 tablespoons Hot curry paste
- β2 tablespoons Coconut oil
- β1 medium Onion
- β1-inch piece Ginger
- β2 cloves Garlic
- β1/4 cup Thai basil
- β2 tablespoons Fish-free sauce (e.g. nam pla)
- β1 cup Coconut milk
- βto taste Salt

Heat oil in a large pan over medium heat.

Add onion and cook until softened, about 3-4 minutes.

Add ginger and garlic and cook for 1 minute.

Add curry paste and cook for 1-2 minutes, stirring constantly.

Add tofu and cook until browned on all sides, about 3-4 minutes.

Add coconut milk, fish-free sauce, and salt. Bring to a simmer.

Reduce heat to low and let cook for 10-15 minutes, or until the sauce has thickened and the flavors have melded together.
