Braised Beef Stew
A hearty Ukrainian-inspired beef stew cooked in a rich broth with tender pieces of beef and root vegetables.
Ingredients
- β1 pound Beef Stew Meat
- β1 large Onion
- β2 medium Carrots
- β2 large Potatoes
- β1 cup Mushrooms
- β2 cups Beef Broth
- β2 tablespoons Tomato Paste
- β1 teaspoon Salt
- β1/2 teaspoon Black Pepper
- β1 tablespoon Dill

Heat oil in a large Dutch oven over medium-high heat.

Brown the beef stew meat in batches until browned on all sides, about 5 minutes.

Remove the browned beef from the pot and set aside.

Add more oil if necessary, then sautΓ© the onion, carrots, and potatoes until the vegetables are slightly tender, about 5 minutes.

Add the mushrooms and cook until they release their liquid and start to brown, about 5 minutes.

Add the beef broth, tomato paste, salt, and pepper to the pot.

Return the browned beef to the pot and bring to a boil.

Cover the pot and transfer to the oven.

Braise the stew for 2 1/2 hours or until the beef is tender.
