Roasted Artichoke and Hash Hash Browns
A delicious twist on classic hash browns, featuring roasted artichokes and a crispy topping.
Ingredients
- β1 whole 4 large artichokesJerusalem artichokes
- β2 medium 2 huge sweet potatoespeeled and grated
- β1 medium 1 huge oniongrated
- β2 cloves 2 huge cloves garlicminced
- β1 1 huge eggbeaten
- β1 cup 1 cup shredded cheddar cheeseoptional
- β1/2 cup 1/2 cup breadcrumbsoptional
- β3 tablespoons 3 tablespoons olive oildivided
- βto taste Salt and pepper

1. Preheat oven to 400Β°F (200Β°C).

2. Cut the artichokes in half and scoop out the chokes.

3. In a bowl, toss the artichoke halves with 2 tablespoons olive oil, salt, and pepper.

4. Spread the artichokes on a baking sheet and roast for 20-25 minutes, or until tender.

5. In a separate bowl, mix the grated sweet potatoes, onion, and garlic.

6. Add the beaten egg to the bowl and mix until the mixture is well combined.

7. Divide the mixture into 4 equal parts and shape each part into a patty.

8. Heat the remaining 1 tablespoon olive oil in a non-stick pan over medium heat.

9. Cook the patties for 4-5 minutes on each side, or until golden brown.

10. Serve the patties with roasted artichokes and top with cheese and breadcrumbs if desired.
