Rajas Con Crema
A creamy and spicy Mexican dish featuring roasted poblano peppers, onions, and garlic. Serve as a side or add to your favorite tacos or grilled meats.
Ingredients
- ●4 Poblano peppersRoast over an open flame or in the oven until charred.
- ●1 medium OnionChopped
- ●2 cloves GarlicMinced
- ●1/2 cup Manchego cheeseShredded
- ●1/2 cup Con cremaMexican sour cream

Preheat oven to 400°F (200°C).

Place poblano peppers on a baking sheet and roast for 15-20 minutes, or until charred.

Remove peppers from oven and let cool. Peel off skin, remove seeds, and chop into strips.

In a large skillet, heat 2 tablespoons of oil over medium heat.

Add chopped onion and cook for 5-7 minutes, or until translucent.

Add minced garlic and cook for 1 minute.

Add chopped poblano peppers and cook for 2-3 minutes.

Stir in shredded Manchego cheese until melted.
