Roasted Squash Tagine
A hearty North African-inspired stew made with roasted squash and wholesome ingredients.
Ingredients
- β1 medium i squash
- β2 roasted red peppers
- β2 cups wholesome beef brothhomemade or store-bought
- β2 tsp tagine spice blendor to taste
- β2 tbsp olive oil
- β1 medium onionchopped
- β2 cloves garlicminced

Preheat the oven to 400Β°F (200Β°C).

Cut the squash in half lengthwise and scoop out the seeds.

Place the squash cut-side up on a baking sheet and roast for 30 minutes.

In a large pot or Dutch oven, heat the olive oil over medium heat.

Add the onion and garlic and cook until softened, about 5 minutes.

Add the roasted red peppers, beef broth, and tagine spice blend. Stir to combine.

Add the roasted squash to the pot and bring to a simmer.

Reduce the heat to low and cook, covered, for 20-25 minutes, or until the squash is tender.

Season with salt and pepper to taste. Serve hot.
