Galician Paella with Blue Cheese
A twist on the classic Spanish dish, featuring the bold flavors of Galician chorizo and creamy Stilton cheese.
Ingredients
- β1 lb Galician chorizosliced
- β1 cup paella riceuncooked
- β1/2 cup Stilton cheesecrumbly
- β2 tbsp olive oil
- β1 medium onionchopped
- β3 cloves garlicminced
- β1 large tomatodiced
- β1/2 tsp safron threads
- β1 tsp paprika
- β1 tsp salt
- β1/2 tsp black pepper

Heat the olive oil in a large paella pan over medium-high heat.

Add the sliced chorizo and cook until browned, about 2-3 minutes.

Add the chopped onion and cook until translucent, about 3-4 minutes.

Add the minced garlic and cook for 1 minute.

Add the diced tomato and cook for 2-3 minutes.

Add the paella rice, saffron threads, paprika, salt, and black pepper. Stir to combine.

Add 2 cups of water to the pan and bring to a boil.

Reduce the heat to low and simmer, covered, for 20-25 minutes or until the rice is cooked and the liquid has been absorbed.

Remove the pan from the heat and top with crumbled Stilton cheese.

Cover the pan with a lid and let it sit for 5 minutes before serving.
