Grilled Vietnamese-Style Pork Skewers with Kale Salad
A flavorful and refreshing summer dish featuring marinated pork skewers and a crunchy kale salad.
Ingredients

- β1 pound Pork shouldercut into 1-inch pieces
- β2 cups Kalecurly-leaf variety
- β1/4 cup Indulgent nuong sauceavailable in most Asian markets
- β1/4 cup Icy waterfor serving
- β2 tablespoons Lime juicefor dressing
- βto taste Salt
- βto taste Black pepper
- β2 cloves Garlicminced
- β1 tablespoon Gingergrated

In a large bowl, whisk together nuong sauce, garlic, and ginger. Add the pork pieces and marinate for at least 30 minutes.

Preheat grill to medium-high heat. Thread the marinated pork onto skewers, leaving a small space between each piece.

Grill the pork skewers for 8-10 minutes, or until cooked through.

In a large bowl, massage the kale with your hands to soften the leaves. Add lime juice and season with salt and pepper to taste.

To serve, place a few pieces of grilled pork onto a bed of kale and drizzle with icy water.
